Directions

Combine 1 cup Vitacost® Mushroom & Green Lentil Rice, 1-3/4 cups water and a pinch of salt in a saucepan over high heat. Bring to a boil, immediately reduce heat to a simmer, cover with a tight fitting lid and cook until all liquid is absorbed and rice and lentils are tender (about 30-35 minutes). Remove from heat and let stand 5 minutes. Fluff with a fork and serve immediately. Serves 4.

 

Once cooked, there are many ways to enjoy this satisfying side dish:

  • Stuff acorn squash, peppers or mushrooms
  • Top with beans, tempeh, chicken, beef or another protein of your choice
  • Add your favorite spices, toasted nuts or sautéed vegetables.

Keep dry and at room temperature (59°-86°F [15°-30°C]).
