Directions

Baked Manicotti

 

For The Sauce

1 1/2 jars jovial crushed tomatoes

1/2 small onion, sliced in half

3 tablespoons extra virgin olive oil

1/2 teaspoon salt

For The Pasta

16 ounces ricotta cheese

4 ounces ricotta cheese

4 ounces grated parmesan cheese

1 egg, beaten

3 tablespoons minced parsley

1/2 teaspoon salt

1 box jovial manicotti

4 ounces shredded mozzarella

 

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium saucepan, combine tomatoes, onion, oil and salt. Cook on medium-low for 20 minutes.
  3. Remove sauce from heat. Discard onion.
  4. Bring 4 quarts of water to a boil. Add the manicotti with a slotted spoon.
  5. In a large bowl, combine ricotta, parmesan, egg, parsley and salt.
  6. Add filling to a pastry bag. Cut a hole at the bottom, 1/2-inch in diameter. pipe the filling in the manicotti but do not over fill.
  7. Add half of the tomato sauce to a 9 x 12-inch baking dish. Arrange the filled pasta two noodles wide. Cover with the remaining sauce and mozzarella.
  8. Cover the dish with foil. Bake for 40 minutes. Uncover, bake for 5 minutes until the cheese has browned.
