When cooked, these coarse corn grits become so indulgently thick and creamy you might just forget that they’re also a good source of fiber and nutrients!
Slowly whisk 1 cup polenta into 4 cups boiling water. Cover and simmer 30 minutes, stirring vigorously every few minutes. Remove from heat and stir in 1 tbsp butter, ½ cup grated cheese (optional), and salt and pepper to taste. Serve immediately.
Suggested Uses:
• Flavor with herbs like thyme, marjoram and chives.
• Top with pesto or roasted tomatoes.
• Add to cornbreads, muffins and cakes for texture.
