You will need:

• 1 lb red or white potatoes

• 2 tablespoons olive oil

Directions:

1. Preheat oven to 425°F. Spray a large baking sheet with non-stick spray.

2. Wash potatoes, peel if desired. Pat dry and cut into 1″ pieces.

3. In a medium-sized bowl, add potatoes and olive oil. Stir to evenly coat. Add seasoning mix* and stir again.

4. Place potatoes in a single layer on baking sheet.

5. Cover with foil and bake for 20 minutes. Stir potatoes and cook uncovered 10-15 minutes more, until crisp and tender.
